“Let’s get the name out of the way. 'Phoque' means seal in French, but hear the phonetics – it rhymes with flock, sort of. I think Lucas and Tom are having way too much fun. However, back to the cracking wine. It’s rose, but starts life differently: 36 hours on skins, pressed, settled and racked with some solids to old French oak where it stays happy for a year. The result is a complex, compelling and textural wine. A copper-Campari hue and tastes a bit like it, too, as this is incredibly savoury, more of an absence of fruit in a way. Amaro, chinotto, saline even, yet it is refreshing and dry with mouth-watering acidity. A serious rose and seriously good, too.”
