From the Silverwood vineyard leased and managed by Kerri Greens since winter 2016.

The 2017 harvest was a celebratory affair with friends and family joining us to help hand harvest a select 750kg of Chardonnay for this classic 100% Chardonnay Blanc De Blanc.

Picked in late Feb when bright, lively and acidic the grapes were wild fermented in two old French barriques before going straight to bottle (sans sulphur) in August of the same year.

After refermentation and a solid 36 months in bottle on lees the Terrestrial Flowers Blancs De Blanc was disgorged. A very minimal 6g/L sugar and a tiny dash of sulphur were it’s final dosage.

“The peninsula is generally not my go-to region for sparkling, but this stopped me in my tracks. A super-dry, crisp style, yet among the white floral aromas come wafts of creamed honey, honeycomb and a touch of toasted brioche. The palate is fine, racy and invigorating, with a lemon/lime-juice acid line and persistent bead. Impressive”
